Rebecca Barnes and her partner Gus Donaghy have been growing native foods for
almost 15 years. They have a thriving bush food farm at Tintenbar, where they create an
amazing variety of produce, jams, cordials, spices and other bush food products.
Rebecca and Gus were recently announced as finalists in this Delicious Produce
Awards for their Lemon Myrtle Spice.


Lemon Myrtle is a coastal rainforest plant that contains the richest source of citral (the chemical component that gives citrus its fragrance) in the world. It has a fresh clean aroma with a lemon, lime and lemongrass flavour. Lemon Myrtle is an extremely versatile spice that can be used in both sweet and savoury dishes. It also makes a very refreshing tea. Use it to flavour biscuits, cakes, sweets, ice cream, mayonnaise, salad dressings, pasta, soups, and curries, or try it sprinkled on seafood, soups or roasts.
