ROYAL GALA APPLES Nothing beats a new season apple, and when it’s a Royal Gala – even better. The crunchy, sweet, but not-too-sweet Royal Gala is the first to hit the markets and can be found at Costanzo Apples, who source their apples from their family farm at Stanthorpe.
NEW SEASON GINGER The ginger most of us are familiar with is thick-skinned, fibrous and has a very spicy kick. New season ginger is different. Its skin is almost translucent, it’s soft, pinky-coloured and has flavour so mild you can eat raw. It’s ideal for salads, stir-fries, pickling and juicing. Find it Organic Forrest at Mullumbimby and New Brighton Farmers markets and other stalls in the coming weeks.
DUCK EGGS Myocum farmer Glenyce Creighton says her free range ducks have loved the recent deluge of rain and are now laying plenty of eggs. A little larger in size than chicken eggs, duck eggs are richer and creamier than chicken eggs and can often be eaten by those allergic to hen eggs. They can be used in the same way as chicken eggs – fried, poached and boiled, and are known to be particularly good for baking, producing richer and fluffier cakes, muffins and other baked goods. You’ll also find chicken, goose, quail, turkey and bantam eggs on Glenyce’s stall.
Look out for Picone Exotic’s pink fleshed dragonfruit variety – the Pink Ice, and the Aztec dragonfruit, which has a beautiful flavour. Dragonfruit also available from Glenyce Creighton at Creighton Organics and Jungle Juice.
